Rainbow Vegan Chickpea Salad
Whether you’re heading out for a picnic with your pals or looking for packed lunch ideas to keep you going between lectures, this refreshing salad is perfect! It takes less than 10 minutes to make and is super simple.
Ingredients:
- 1 tin of chickpeas
- Half a cucumber, chopped into small cubes
- 1 red pepper, chopped into small cubes
- Half red onion, sliced
- Sweetcorn (fresh or tinned)
- Handful of tomatoes, chopped
- 100g vegan feta cheese (crumbled) OR vegan cheddar (cubed)
- 1 tablespoon olive oil
- Splash of lemon juice
- Salt and pepper
- Chilli flakes
- Drain the water from the tin of chickpeas and add the chickpeas to your salad bowl
- Chop up your vegetables (if you haven’t already) and add to the bowl
- Add your choice of cheese
- Add the olive oil, white wine vinegar and lemon juice before stirring in the chilli flakes and mix well
- Season your salad with salt and pepper
You can swap and change any of the vegetables in the salad to suit your taste! Croutons are a nice addition for a bit more crunch. Why not try a dash of sweet chilli sauce to top it off?
