Halloumi & Grilled Vegetable Wraps Recipe

Serves 6

Ingredients

50g red peppers, sliced
50g yellow peppers, sliced
50 green peppers, sliced
1 courgette cut into batons
6 wholemeal wraps
350g halloumi
Handful rocket
100g lemon hummus
Olive oil
Salt & pepper

Method

  • Lightly oil and season the vegetables, place on a baking tray and roast for 20-30mins at 200C until tender
  • Slice halloumi into approx. 2cm x 6cm slices and relatively thin
  • Fry lightly on a griddle pan on a medium heat for 20-30 secs until slightly golden
  • Heat the wraps gently on the griddle pan
  • To assemble – Spread a spoonful of lemon hummus into the centre of the wrap
  • Divide the roasted vegetables and halloumi between the 6 spread wraps and serve with a little rocket for garnish
